Best Potato Kugel Ever!

I have been asked many times, for my Potato Kugel recipe, and I'm not sure why, but I have finally decided to share it.

Best Potato Kugel Ever!!!

The following is a Potato Kugel recipe, that I (together with my tasters) have perfected over many years. 

Ingredients:
  • 14 Medium Potatoes
  • 11 Eggs (you can add up to 14 or subtract to 7, as you wish)
  • 1 Medium Onion (unless you like more onion, then it can be large or 2 medium ones)
  • 1½ Cup Canola (or vegetable/olive) Oil
  • 1 tbsp Salt (I use my eye and guess how much to add)
  • 1 tsp Secret spice (can't say which, to find out which one, call feves), the more you add, the stronger the flavor will be.
Directions:

  1. Peel potatoes and place into bowl of Luke-warm water. 
  2. Pre-heat oven to 400° (depending on your over, may take a few weeks, to get this right).
  3. Chop potatoes into smaller pieces, so they chop or grate well and won't become puree in the food processor.
  4. Mince onion in food processor. 
  5. Add eggs, oil, salt and pepper into food processor and mix again (not for too long, just until mixed enough). Pour contents into bowl.
  6. Chop or Grate Potatoes in food processor, and then add promptly into the mix that is in the bowl, and stir well. (I use the knife blade, some people like to use the grater). For chopping, take 2 hands full of potatoes, chop and add to bowl, for grating, you can grate a number of pieces before having to add them to the bowl of eggs and onion mix.
  7. Lightly grease bottom of Pyrex 9x13 dish with oil (to allow Kugel to bake better and easily come out of pan and make your life easier for cleaning after consumption).
  8. Pour contents of bowl into Pyrex dish and place into oven.
  9. Bake at 400° (depending on your make and model of oven) for 1 hour, and then at 300° for another 45-60 minutes, depending how crispy you want the top to be.

Remove from oven, wait (don't burn yourself), make a brocha, eat and enjoy!
